Deer salami, where to get it made.

The meat center where I used to get my vension processed has changed hands. He does not even come close to making hard salami the way the previous owner did. Does anybody know where I can take my deer trimmings and get HARD SALAMI made. Anywhere in the Alex area or west of Alex would be great. Hard to find anybody that even makes hard salami.

Check with Minnewaska Meats. They do a good job. Not sure about Hard Salami but I am very impressed with their work. Check them out in Glenwood. Not sure about any contact info for you...

I agree that Minnewaska Meats in Glenwood is a good choice. They make my venison summer sausage (jalapeno / cheddar cheese) and it is absolutely awesome. Eric does a great job. ( Note from Admin, please read forum policy before posting again,Thank-you.) Give the jalapeno/cheddar a try as well.

I would have to agree about Klinders, he does make great sausage, beer sticks, and jerky. I've never tried his salami, but I'm sure if you stopped out to his shop he'd have samples to try.

I'd have to give a third nod to Minnewaska meats. Eric does a great job. In a pinch Carlos Meats is also a great little shop. Great variety and all small batch processes.
