I'm glad the pickled Smelt turned out good for you. I'll be frying some Smelt for my wifes co-workers this afternoon and I'm also going to bring along some pickled Northern and pickled Smelt. The Northern usually goes over well. We'll see what they have to say about the pickled Smelt.

I'm starting to wish that I had more Smelt in the freezer!!!

I hear ya on that...oh well, that gives us more to look forward to next year...more cleaning... eek

My pseudo Smelt smoking did not fare as well, not enough meat on those little things when dried, the tails got sharp and pointy, had to nibble those carefully... frown
